The overall philosophy of eat! and drink! is to enjoy food and wine together and embrace it as an integral part of your every day life experience. We strive to offer products in both stores that are unique to our marketplace, have a very extensive sense of place, and are backed up by education and service. We believe that a bottle of wine or selection of artisan cheeses is to be enjoyed every day, not just for special occasions! Due to Colorado State Laws eat! and drink! are two separate entities, with separate licenses, separate entrances & exits, and separate owners but with a shared philosophy. eat! drink! is owned, managed and conceptualized by Pollyanna Forster and Chris Irving.
eat! is a soulful combination of an artisan cheese shop and specialty foods market with a fully operational wine & tapas bar. During the day eat! is a mecca for connoisseurs of artisan cheese (over 100 at all times), an olive bar, olive oils and balsamic, chocolate, spices, hand crafted breads and all accompaniments for these items. All day long and into the evening eat! offers an exciting seasonal menu of organic salads, paninis, artisan cheese presentations and over 30 wines by the glass. An amazing synergy is created in every bite and every sip taken! drink! has become renowned for its wine selections with over 500 choices. drink! offers hand crafted beers from around the world and a small selection of liquors that are exemplary in their category. By hiring quality individuals to assist our guests and offering extensive information and guidance throughout the environment drink! has differentiated itself in the Vail Valley and beyond. Our goal is to enrich our guests experience through wine, food, and expand and enlighten their selection process when appropriate.
