Goat Cheddar by Cypress Grove
From Cypress Grove Chevre, the makers of our beloved Humboldt Fog, comes this aged goat's milk cheddar. Sharp and smooth, this cheddar is aged a minimum of one year, giving it a complex, nutty flavor. Off-white in color, as opposed to the yellow of the cow's milk variety, Cypress Grove Goat Milk Cheddar is not overly "goaty," although the chevre is discernable. Grafton Village Maple Smoked Cheddar
Maple Smoked Cheddar is just one of the Grafton Village Cheese Company's excellent cheeses. It is bathed in the cool smoke from smoldering hard maple wood for four to six hours at the end of the aging period. What taste could be more typical of Vermont? The smoke is used to season, not to preserve. It adds a delicious nuance reminiscent of bacon, and is an excellent part of any breakfast menu (try it in an omelet!) and on cocktail trays. We were so impressed by its quality that we honored Maple Smoked Cheddar from Grafton Village as our July 2002 Cheese-of-the-Month.

Harlech
The Welsh are continuing to create new and exciting cheeses, showing the world that there is more to them than the simply delicious Caerphilly. Harlech is a zesty, smooth cheese named after Harlech Castle in Northern Wales. They chose one of their most picturesque treasures to name this hardy cheese. Built in the 13th century, Harlech Castle sits atop a cliff, keeping a watchful eye over the sea and Snowdonia, the land below. Harlech is a mature cheddar blended with horseradish and parsley. This vegetarian cheese is perfect as a table cheese to add a contrast to any cheese course , paired with a beer or a Rioja, and adds a new piquancy to cheese based dishes.

Irish Green Wax Mature Cheddar
Our Green Waxed Cheddar is produced by Tuxford and Tebbutt from pure Irish milk. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". Here, the winds blow in from the Atlantic, depositing rain throughout the year, providing the perfect growing conditions for lush grazing. This environment produces rich, creamy milk that is perfect for cheese making. Our Irish Green Wax Cheddar is aged for a minimum of 12 months, but may be aged longer as it is only when that distinctive strong Irish cheddar flavor is ready that Tuxford and Tebbutt's master grader will deem the cheese ready for sale. The cheddar is then cut into blocks and covered in green wax, giving the cheese a distinctive Irish appearance.

Isle of Man Flavored Cheddars
Well respected by cheese connoisseurs, the Isle of Man Dairy has been producing exceptional cheese since 1934. The milk supplied by the island's dairy herds is distinctively creamy, and is one of the secrets behind the award winning taste of their range of innovative cheeses. Once they've delivered fresh milk to all corners of the Isle of Man, the dairy uses the remaining 70% of their milk to produce our award winning range of cheeses - all of which reflect the traditional skills and long culinary heritage of the enchanting island.     Isle of Mull Cheddar
    Isle of Mull Cheese is made on the beautiful Isle of Mull, in the Inner Hebrides, off the West Coast of Scotland. Sgriob-ruadh farm is a family owned dairy and the only dairy farm on the island. The Reade family uses unpasteurized milk from predominantly Friesian, the odd Ayrshire or Jersey, and more recently from Brown Swiss cows that have been introduced to the farm. The cows live on a diet of grass, herbs and draff (a distillery by-product of ground-up malted barley). When the cows are milked in the morning, the milk is taken directly from the milking parlor to the cheese-making vat. Approximately 20 wheels are made per day. The cheese is firm pressed, bound in cloth, and matured for up to 12 months in the the Reade's cellar.

    The burn which flows past Sgriob-ruadh farm also supplies the water for the Tobermoray Distillery. Isle of Mull Cheddar, too, has a unique character, similar to that of a fine single malt. Isle of Mull is pale in color, and softer in texture than English cheddars. Tangy, spicy, laced with malted barley tones, this Scottish cheddar is a shining example of artisan cheese making.
    • Please Note: From time to time, blue veins develop in "Isle of Mull". This is a natural blueing considered by many to be a delectable bonus. Often this blueing is found in cheese of especially rich maturity.

    Jalapeno Cheddar by Cabot Creamery
    As it was early last century, Cabot is still a sleepy little farm town tucked into the rocky soil of Northern Vermont's rolling hills. Located there is the Cabot Creamery, a dairy cooperative dedicated to creating world-class cheddars while supporting the hard-pressed independent farmers who supply their milk. Established as a cooperative in 1919, the dairy farmers actually own the company!

    This delicious Jalapeno Cheddar is spicy enough to satisfy the heat-seekers, but still allows the quality of the cheddar taste to shine through. The great news for weight-watchers is that this tasty treat has only 50% of the fat of other cheddars. Terrific on burgers, grilled cheese, quesadillas, this cheddar will liven up lunch sandwiches and salads too.
